Pickled Pumpkin

This was the most amazing thing I have tasted in years...I had to ask what it was... it was very yellow, cut in very neat little cubes, tastey, very sweet explosion in your mouth when bitten into.

I used Herbert Squash roughly cut to give it a little personal edge, I added a quater bag of pickling spice. The longer you keep it in the fridge the better it tastes.

Also had smoked Eland and mascarpone - a weird sweetness almost tasting of custard.

Quick Microwave Rice Pudding

Microwave Old Fashioned Rice Pudding (from About.com)

Ingredients:
2 cups cooked rice
2 cups milk
3 eggs
1/2 cup raisins
1/3 cups granulated sugar
1/4 tsp salt (optional)
1 tsp vanilla extract
1/4 tsp ground cinnamon or nutmeg

In microwave-proof two-quart casserole or baking dish, mix together eggs, milk, sugar and salt. Stir in rice, raisins and vanilla. Cook uncovered on high for eight to 10 minutes. Stir every one to two minutes. Sprinkle with cinnamon or nutmeg and let stand about 30 minutes, without stirring. Serve warm or cold
